Heat the oven to 190C. Melt the butter in a cast iron pot with the oil then brown the chicken on both sides before the end of browning add the wine,onions and tarragon,lemon juice and curly kale

Cover and roast for 30 minutes then transfer the chicken and mushrooms to a warm dish and set aside. Meanwhile make the gravy put the pan of chicken juices on the hob heat remove the sprigs of tarragon add the butter and stir in the herbs mix well.

Next stir in the cream and stir in slowly keep stirring. Then pour over chicken and serve with boiled potatoes and some broccoli.
