Ingredients

  1. 1 cupchopped (processor) scallops
  2. 1 teaspoonfresh parsley
  3. 1 teaspoonfresh cilantro
  4. 1 teaspoonchives
  5. 1egg
  6. 1/2 cupmayonnaise
  7. 2 teaspoonsflour
  8. 1 teaspoonsalt
  9. 1/2 teaspoonpepper
  10. 1/4 cupchopped celery
  11. 1 teaspoonchopped shallot
  12. 1/2 teaspoonlime juice
  13. 1/2 teaspoongarlic powder
  14. 1/2 teaspoonolive oil
  15. Bread crumbs until lightly thick

Cooking Instructions

    Mix all ingredients lightly in a mixing bowl

    Pan fry with olive oil until golden brown on both sides

  3. 3

    Place cakes on a baking sheet at 350 for 5-7 minutes

  4. 4

    Serve with lemon wedge and cilantro-lime mayo spread (mayo, lime juice, salt, pepper and cilantro)
