Marinated chicken livers with aromatic herbs, perfect with sticky rice and spicy Jaew dipping sauce. Deliciously flavorful!

Clean the chicken livers by rubbing them with tapioca starch, then rinse thoroughly with water. Drain well in a colander.

Pound the cilantro roots, garlic, black peppercorns, and coriander seeds together until fairly fine. Add this mixture to the chicken livers in a bowl. Add all remaining seasoning ingredients and gently mix until well combined. Marinate for at least 30 minutes, then thread the livers onto skewers.

Grill the skewers in the oven using the broil setting at 420°F (215°C), turning occasionally until the livers are just cooked through. You can also grill them over charcoal for extra flavor. Serve hot with sticky rice and Jaew dipping sauce.
