A very delicious dish that everyone loves. Everyone has their own way of making and serving it. Chole tikki is enjoyed by all.

Boil the chickpeas with salt until they are soft and cooked through.

Heat oil in a pan. Add bay leaf, cloves, cinnamon, and cumin seeds. Add the tomato puree. Add all the dry spices. Cook until the oil separates from the masala. Then add the boiled chickpeas. Add water to adjust the gravy consistency. Cook until the gravy thickens.

For the tikki, mash the boiled potatoes. Add cilantro, red chili powder, chaat masala, roasted cumin powder, ginger, both salts, and mix well. Shape into patties. Cook the patties on a skillet until golden brown on both sides.

To serve, arrange the tikkis on a plate. Drizzle both chutneys over them. Add the chole on top. Then add onions and more chutney. Add more chole if desired. Top with both chutneys, sev, and pomegranate seeds. Sprinkle with cilantro.
