Ingredients

  1. For the chole (chickpeas)
  2. 1 cupchickpeas (about 200 grams)
  3. 2tomatoes, pureed
  4. 2green chilies
  5. 1/2 teaspoonginger paste
  6. 2cloves
  7. 1small piece cinnamon stick
  8. 1 teaspoonKashmiri red chili powder
  9. 2 teaspoonscoriander powder
  10. 1/2 teaspoonturmeric
  11. 1 pinchasafoetida (hing)
  12. Salt to taste
  13. 1/2 cupfresh cilantro, chopped
  14. 1/2 teaspooncumin seeds
  15. 2 teaspoonsoil
  16. For the aloo tikki (potato patties)
  17. 8boiled potatoes
  18. 3green chilies, finely chopped
  19. 1 teaspoongrated ginger
  20. 1little black salt
  21. 1little regular salt
  22. 1 teaspoonroasted cumin powder
  23. 1 teaspoonchaat masala
  24. For assembling the chaat
  25. 1/4 cuptamarind sweet and sour chutney
  26. 1/4 cupspicy green chutney
  27. 1/2 cupnylon sev (thin crispy chickpea noodles)
  28. 1/2 cuponion, finely chopped
  29. 1/2 cuppomegranate seeds

Steps

  1. 1

    Boil the chickpeas with salt until they are soft and cooked through.

    Heat oil in a pan. Add bay leaf, cloves, cinnamon, and cumin seeds. Add the tomato puree. Add all the dry spices. Cook until the oil separates from the masala. Then add the boiled chickpeas. Add water to adjust the gravy consistency. Cook until the gravy thickens.

    For the tikki, mash the boiled potatoes. Add cilantro, red chili powder, chaat masala, roasted cumin powder, ginger, both salts, and mix well. Shape into patties. Cook the patties on a skillet until golden brown on both sides.

    To serve, arrange the tikkis on a plate. Drizzle both chutneys over them. Add the chole on top. Then add onions and more chutney. Add more chole if desired. Top with both chutneys, sev, and pomegranate seeds. Sprinkle with cilantro.
