Steps

First wash and cut brinjals into slices or cubes,depends on the size of the brinjal.keep in a salty water bowl so they won't change their colour.

Now heat oil in a wok, when it heats put cut brinjals pieces in hot oil and fry until light golden in colour.after frying place them out in a plate.

Now for preparing garlic masala - In a mixer jar first add garlic cloves, green chillies,ginger,run the mixer for few secs.now add all spices of garlic masala (mentioned above garlic masala section)and again give it a spin.for few seconds.keep aside.

Now heat 2tbsp of oil in a pan.add prepared garlic masala and fry for a min on low flame.

Now add finely chopped tomatoes and salt saute well.add 2 tbsp of water and cook covered for a min or 2 until tomatoes gets soft.

Now add fried brinjals and mix until well coated with masala.cover with lid and cook for a min or 2 only.

Add fresh chopped coriander mix well and switch off the flame.

Fried garlic masala brinjals are ready to serve,serve with roti or chapati. it's taste yum.
