Ingredients

4 servings
  • 6 ozPenne Pasta
  • 1 cupfresh sugar snap peas
  • 1yellow squash, chopped
  • 1zucchini squash, chopped
  • 2/3 cupmatchstick carrots
  • 1red bell pepper, sliced (matchstick)
  • 1green bell pepper, sliced (matchstick)
  • 1small head of broccoli, cut to mini tree tops
  • 4 tspOlive Oil, divided
  • 1/2 tbspitalian seasoning
  • 1 tsplemon juice
  • 1/4 tspsalt
  • 1/4 tspblack pepper
  • 1/2onion diced
  • 2 clovesgarlic
  • 1/4 cupfresh basil, chopped
  • 1/4 cupfresh parsley chopped
  • 1 1/2 tbspbalsamic vinegar
  • 1/4 cupParmesan Cheese, grated

Steps

  1. 1

    Preheat oven to 450 F;
    Line baking sheet with aluminum foil

  2. 2

    Cook pasta according to instructions, add sugar snap peas 3 minutes before finished. Drain

  3. 3

    Mix all other veggies (squash, carrots, bell peppers and broccoli) with 2 tsp olive oil, salt, pepper, lemon juice, and Italian seasoning. Place on prepared baking sheet and roast until tender ~15min.

  4. 4

    Saute onion in remaining oil until tender in a large skillet
    .

  5. 5

    Add pasta, basil, parsley and balsamic vinegar. Mix and cook until heated through, ~3-5 min.

  6. 6

    In a large bowl mix roasted veggies with pasta mixture and sprinkle with Parmesan cheese.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
