Whisk egg whites and buttermilk

Whisk yolks and melted butter

Combine 2 egg mixtures and whisk until thoroughly combined

Combine dry ingredients

Pour wet mixture over dry mixture and mix just enough to bring together. Do not work all lumps out. Add fruit if desired.

Pour 1/4 cup onto griddle. When bubbles set around edges, flip gently.
