Ingredients

  • 1 kgtin of Irish potatoes
  • 2cobs of soft maize, shelled
  • 1 handfulcucumis Ficifolia commonly known as kahurura
  • 1 bunchspring onions
  • Oil for frying

Steps

  1. 1

    Boil the peeled potatoes and maize until tender. Drain

  2. 2

    Boil the kahurura until soft, you can blend at this point, I did not.

  3. 3

    Mix together and mash.

  4. 4

    Fry the onions and add the mashed mixture.

  5. 5

    Serve with the accompaniment of your choice.

  6. 6

    I served with some tomato coulis on the side.
