Peel potatoes, dice and fry

Sauté the onions and garlic, and add in the spices.

Add the veggies and half a cup of water to cook the veggies through.

Add seasonings and adjust the taste if needed. Then add in the fried potatoes and stir-fry for 3-5 mins. Best served with Pan seared beef and gravy.
