How do I even begin to tell the story of what inspired this recipe?. Well, to cut long story short; I was thinking, was I even thinking? 😂😂well, it was a thought. So let's leave like that. I made rice and palm oil stew as breakfast for everyone at home yesterday and at noon they had my delicious nsala soup and hot akpu. It was almost evening, but what I would make for dinner was not forthcoming to my mind. But then, my brother sent me an errand and a thought came to mind saying "Emryson! Why not make plantain pottage? " I quickly wrote down little things I needed and off I went to the market. Got everything and came out with delicious goodness 😍😍

Season your fish with any season of your choice. Set on fire and cook for about 10mins. Fry and set aside.

Blend your pepper, tomatoes and one onion together. Place your on fire, add your oil, hit up and then add your oil. Stir fry for about a minute and then add your pepepr mix. Stir fry for about 10mins and then add your stock cubes.

Pour in your fish stock and add about 1½ cup of water. Add your salt, stir together and cover to boil. Then stir in your finely washed and chopped plantain. Stir together and leave to cook for about 15mins.

Stir in your Crayfish, stir together and then add vegetable. Stir together and turn of the heat.

Your plantain pottage is ready. Enjoy with a glass of water or any soft drink of your choice.
