Ingredients

90 minutes.
4_6 servings
  1. 1 cupchana dal
  2. 4 cupschopped spinach
  3. 1 cupchopped methi
  4. 1 cupdil (soya) leaves
  5. 1 cupchopped egg plant
  6. 1 cupchopped green gourd
  7. to tastesalt
  8. 2chopped onions
  9. 1 cupchopped potatoes
  10. 4chopped tomatoes
  11. 2 tspginger - garlic paste
  12. 2chopped green chillies
  13. 4chopped garlic cloves
  14. 1 tspcoriander powder
  15. 1/2 tspred chilli powder
  16. 3/4 tspturmeric powder
  17. 4 tbspoil
  18. 1 tspcumin seeds
  19. 1 tspMango (amchoor) powder
  20. 3/4 tspasafoetida

Steps

90 minutes.
  1. 1

    Wash and soak the dal for an hour.

    Heat oil in a cooker with chopped onions.

    Cook till they become little brown add ginger garlic paste,cook till aroma smells off.

    Now add red chilli powder and turmeric powder,mix well and stir for a second.

    Add chopped tomatoes, mix well and stir for a minute.

    Now add all chopped green chillies & salt.Mix well and stir.

    Add all chopped vegetables and mix well.

    Now drain the water from the dal and add it.Mix again.

    Add all the chopped greens,mix well & stir for a minute.

    Now add 2 Cups water.

    Covet the cooker with lid and allow 3 whistles.

    Let it cool down and then open the cover.

    Now mash all with the masher.

    Heat 2 tbsp of pure ghee in a pan with cumin seeds.

    When they crackle up,add chopped garlic cloves.mix well & stir for a second.

    Now add hing & dry mango powder.mix well & switch off the flame.Pour this tempering over the cooked veggies.

    Cook on low flame for 5 minutes.Serve hot with jerra rice or chapati.
