Ingredients

  1. 500 gmbaingan/brinzal
  2. 1onion chopped
  3. 1tomato chopped
  4. 1potato chopped
  5. 2green chilli
  6. 1 tbspginger-garlic chopped
  7. 2 tbspoil
  8. 1 tspcumin
  9. to tastesalt and red chilli
  10. 1 tspturmeric
  11. 1 tbspcoriander

Steps

  1. 1

    Heat oil in a pan,add cumin,saute ginger-garlic

  2. 2

    Add onion,tomato and spices,saute it and cook till tomato get mashy

  3. 3

    Now mix baingan and potato and mix well,add 1 cup water and mix,cover it and cook for 5 to 6 minutes or untill potato get soft

  4. 4

    Serve with paratha.
