When it's cold outside, you need a hot, comforting meal! This minestrone is packed with vitamins and energy to keep you going all day.

Sauté the chopped onion in a pot with a little olive oil. Add the minced garlic and stir for 30 seconds. Add the diced celery and carrot, and cook for 5 minutes, stirring occasionally.

Add the can of diced tomatoes, chicken broth, and dried herbs. Simmer for 10 minutes.

Add the rinsed white beans and crozets pasta. Cook for about 10 minutes, or until the pasta is done. Adjust seasoning to taste and serve hot, topped with Parmesan cheese and celery leaves.
