Ingredients

Serves 4 servings
  • 1 stalkcelery (cut into small cubes)
  • 1carrot (peeled and cut into small cubes)
  • 1small can white beans
  • 1small can diced tomatoes
  • 1onion (finely chopped)
  • 2 clovesgarlic (minced)
  • 1 teaspoondried oregano
  • 1 teaspoondried basil
  • 3.5 ouncescrozets pasta (100 grams)
  • 6 1/3 cupschicken broth (1.5 liters)
  • Parmesan cheese
  • Olive oil
  • Salt and pepper

Steps

  1. 1

    Sauté the chopped onion in a pot with a little olive oil. Add the minced garlic and stir for 30 seconds. Add the diced celery and carrot, and cook for 5 minutes, stirring occasionally.

    Add the can of diced tomatoes, chicken broth, and dried herbs. Simmer for 10 minutes.

  3. 3

    Add the rinsed white beans and crozets pasta. Cook for about 10 minutes, or until the pasta is done. Adjust seasoning to taste and serve hot, topped with Parmesan cheese and celery leaves.
