Prepare all the ingredients. In Peru, it’s common to buy blended chili peppers and chicha ready to use, but you can prepare them yourself.

Spices are prepared and sold for the specific meal you’re making that day.

Next, brown the pork well. Once browned, set aside.

Make the seasoning by sautéing the onion and garlic. Add the chili peppers, season, and cook for about 10 minutes. If needed, add a little turmeric for more color.

Add the pork pieces, then pour in the chicha or beer. Cook for 20 minutes, then add 4 cups of boiling water and continue cooking for another 30 minutes or until the pork is tender. Set aside.

Add the rice, then the bell pepper, peas, carrot, and corn. Adjust the seasoning; the mixture should be a bit salty since the rice will absorb the salt. Cover and cook until the rice is fluffy and the grains are separate.

When the rice is almost dry, stir to finish cooking evenly. Ready to serve and enjoy with your family.
