Ingredients

4 servings
  1. 1/2 kgcarrot or gajar
  2. 2 cupsmilk
  3. ¹/² cup grated khoya or mawa
  4. 1/2 cupsugar
  5. 4cardamom pods or elaichi or (skinned and powdered)
  6. 2 tbspsghee
  7. Handfulmixed nuts pista, cashew & almonds

  1. 1

    Wash carrots under running water. Peel them and grate in a food processor or with a hand grater. Set this aside.

  2. 2

    Dry roast nuts on a low heat until crunchy. You can also chop them first and fry in ghee if you prefer.

  3. 3

    Set aside to cool and chop them.

  4. 4

    Next bring milk to a boil in a heavy bottom pot or deep pan.

  5. 5

    Add grated carrots and begin to stir.

  6. 6

    Cook until the milk has completely evaporated. Keep stirring constantly in between to prevent burning.

  7. 7

    Add sugar and stir. Sugar would release lot of moisture.

  8. 8

    Cook until half the moisture evaporates.

  9. 9

    Add ghee and stir well.

  10. 10

    Continue to cook until the moisture evaporates and the halwa thickens. Add grated khoya at this stage. Stir and cook for just 2 to 3 mins.

  11. 11

    Garnish carrot halwa with nuts. Serve Warm or chilled.
