Put the almonds,sugar,flour and salt in a bowl and mix them.

Whisk the egg whites until they are firm. Add the lemon extract to the whites and stir gently.

Add the egg whites to the bowl and mix with a spoon. Then mix with your hand to get a smooth dough.

Roll into little balls and put them on grease proof paper. Leave for 15min so they harden up a little. Put the oven at 150 degrees for 15min. After leave for 5min to finish cooling delicious!!
