Making cookies with black beans was probably the first healthy baking recipe i tried. It was a real #cookingdiscovery : that you could use something healthy and full of protein like black beans to make something fudgy and delicious 😍

Ingredients

makes 12-15 servings
  1. 1/4 cupmaple syrup
  2. 1 tbspchia seeds
  3. 1 tbspground hemp seeds (flaxseeds work well too)
  4. 1 tspvanilla extract
  5. 1 can (400 g)black beans, rinsed and drained
  6. 1/2 cupcacao powder
  7. 2 tbspcoconut oil
  8. 2 tbspunsweetened milk of choice
  9. Generous pinch cayenne pepper
  10. 1 tspmaca powder
  11. Generous pinch of sea salt + more for sprinkling
  12. 1/4 cupdried sour cherries (unsweetened and with no oil used)
  13. about 75g of 80% chocolate, chopped - or chocolate chips or vegan chocolate chips

Steps

  1. 1

    Preheat oven to 190C.

  2. 2

    Mix the maple syrup, vanilla, chia and flaxseeds in a bowl.

    Put the beans, cayenne, cacao, maca, coconut oil and salt in a food processor or blender. Mix til all combined and smooth.

    Add the maple/ chia mix and milk to the bean mix. Mix together. It’ll be quite a sticky texture.

    Fold in the chocolate and cherries.

    Take about a heaped teaspoonful of mix and roll into a ball. Place onto a lined baking sheet.

    Flatten each ball slightly. Sprinkle with sea salt. Bake for 15-20 mins.
