Break coconut and grate into fine strips then set aside.

Put water in a clean pot and add sugar, stir and add lemon juice and stir. This lemon when combined with coconut it give a very nice flavor, hence no need for flavoring.

Allow mixture to boil for a minute and add grated coconut and stir. Keep staring to avoid being burnt, when you notice the water getting thick and sticky, reduce heat and continue stirring until the colour starts getting brownish, then turn off heat and keep stirring.

Turn into a tray and allow to cool off and serve as a yummy snack or enjoy with soaked garri.
