First time making pancakes :) Wow, I didn't expect them to be this delicious :)
Steps
- 1
Break 1 and a half bananas into a bowl (save the remaining half for topping), and mash until very smooth. For a smoother pancake, you can blend the bananas.
- 2
Add 2 eggs, 1 teaspoon salt, and 1 tablespoon chia seeds to the bowl and whisk together. Then add the oats and mix well. Be sure to add the salt! The batter thickness depends on how much oats you use. If it's too thick, add a little milk. If you don't have quick oats, blend regular oats first to make them finer for better texture and faster cooking.
- 3
Heat a skillet and pour in the batter to form pancakes. Flip often to prevent burning. Cook until both sides are golden brown. If the pancakes are thick and you're worried about burning, you can brown both sides in the skillet, then microwave for 1 minute to finish cooking the inside.
- 4
Once cooked, place the pancakes on a plate and decorate with fruit.
- 5
For the syrup, mix yogurt with 2 tablespoons orange juice, 1 tablespoon lemon juice, and 1 tablespoon honey. Stir well and drizzle over the pancakes.
