Garlicky Spinach Mushroom

A flavourful Palak dish with garlic and mushrooms

Ingredients

  1. 2 bundlesspinach
  2. 10-12garlic cloves
  3. 1/2 inchginger
  4. 1green chilli
  5. 2tomatoes purée
  6. 2onions finely chopped
  7. 1 tbspoil
  8. 1 tspcumin seeds
  9. 1/2 cupboiled corns
  10. 10-12mushrooms halved
  11. Salt as per taste
  12. 1/2 tspTurmeric powder
  13. 1/2 tspcoriander powder
  14. 3/4 tspred chilli powder
  15. 1/2 cupfresh cream

Cooking Instructions

    Wash and blanch the spinach. Drain the water, once it cools down grind into purée.

    Chop the mushrooms into large chunks and boil the corn kernels.

  3. 3

    Make a fresh paste of garlic, ginger and green chilli.

  4. 4

    In a non stick pan heat the oil, add cumin seeds and let it crackle. Add ginger-garlic-green chilli paste and cook for a minute. Add chopped onions and sauté till they turn translucent.

    Add all the dry spices and sauté for 30 secs and add boiled corn and mushrooms and cook for 4-5 mins. Add tomato purée and cook till oil separates from the masala.

    Now add the Palak purée and cook for 2 mins. Add some fresh cream and mix well.

    Switch off the flame and serve garnished with some more cream drizzled over it.
