How to pack as many of your 5 a day as possible. This chilli is pretty vegetable packed. And you can add even more if you serve it with a salad.
Steps

Fry the mince in the olive oil with the garlic.

Add the cumin, chilli, garlic and coriander powder.
- 3
Add the carrots, celery, courgettes and peppers and fry gently.
- 4
Add tinned tomatoes and drained kidney beans - you may need a little extra water.
- 5
Simmer gently for an hour to an hour and a half.
- 6
Serve with plain boiled rice and top with sour cream.
