Ingredients

  1. 2Potatoes (boiled)
  2. 5-6 tbspGhee(clarified butter)
  3. 80-100 gmsSugar
  4. 1/2 cupWater
  5. 1-2Cardamom
  6. 10-15Almonds(blanched)
  7. few strandsSaffron

Cooking Instructions

    Boil potatoes and remove the skin.Mash it and keep aside.

    Heat ghee in a pan and lower the flame. Put mashed potatoes and stir constantly on a slow flame for at least 10 minutes.

    Keep on stirring and don't let the potatoes to stick the pan. If it sticks, switch off the burner and wait for a minute or so.Scrape the potatoes from the pan with the help of a spatula. Switch on the gas and keep stirring the potatoes mixture till it changes colour band ghee starts seperating

    Heat 1/2 cup water on the other burner.... while potatoes are being cooked.

    Switch off the burner and add hot water to the potato mixture very carefully and mix it gently. Switch on the the gas and keep stirring Add sugar and keep on stirring till the sugar dissolves and a thick consistency is reached. Add cardamom powder and saffron strands. Switch off the burner and serve hot halwa decorating with blanched and chopped almond.

    NOTES - You can add little more water if the halwa looks dry.
    Sometimes potatoes are very dry and sometimes it retains a lot of water.
    Can adjust sugar from 80 to 100gms depending on
    Your sweet taste.
    You can also add saffron mixed in hot milk..I have done this in this recepie. But I think adding saffron strands is also a good idea....By doing this, the colour of halwa will look much better. You can put milk instead of water.But I prefer water as this will make halwa light.
