Steps
- 1
Wash and cook your gizzard with salt.
- 2
Slice your gizzard and set aside. Cut your ripe plantain to take almost the same shape as your gizzard. Fry your plantain and gizzard.
- 3
In another pot, put a little oil, add your onions, garlic and ginger and fry a little.
- 4
Add your tomatoes and pepper and fry. Some people preferred blending the pepper, tomatoes and tatashe and then boil to reduce the water before frying. Which ever method is okay, but I prefer dicing the tomatoes and pepper and then fry it.
- 5
Once your tomatoes is properly fried, add a little water and spice with stock cube, a pinch of salt, thyme, rosemary, oregano and black pepper.
- 6
Add the fried plantain and gizzard and allow it to simmer for some minutes.
- 7
Add your veggies that is green pepper, tatashe and cabbage. Stir and turn off the light
