Stuffed brinjals in cooker

Remove the stalks of brinjals. Cut them vertically into four pieces but joined at the base. Cut the potatoes into big chunks.Heat a tbsp of oil in a cooker. Add the brinjals and potatoes. Add some turmeric powder and salt. Saute for 5 to 6 minutes on medium flame. Remove and keep aside.

In the same cooker add remaining oil. Add jeera and hing. Grind the onion garlic and tomatoes coarsely and add to the oil. Add turmeric powder red chilli powder.

Add salt and see that the masala is cooked. Add the fried brinjals and potatoes. Add garam masala.

Mix well so that the brinjals are coated with masala. Add water as desired and cook covered for two to three whistles. The cooked curry will look like in third pic.

Garnish with coriander and serve.
