Coconut Chicken

Ingredients

  1. 2 lbsboneless skinless chicken breast
  2. Salt
  3. Pepper
  4. 1 1/2tblsp Olive oil
  5. 2tblsp turmeric powder
  6. 1onion thinly sliced
  7. 2 clovesgarlic
  8. 14 ozcoconut milk
  9. 8 oztomatoe sauce
  10. 14.5 ozdiced tomatoes
  11. 3tblsp sugar
  12. Chilli powder (optional depending on how spicy you want it)

Cooking Instructions

  1. 1

    Cut chicken into 1/2 inch pieces and season with salt and pepper to taste

  2. 2

    Heat oil and turmeric powder over medium heat for 2 minutes (also chilli powder for a spicier end product)

  3. 3

    Add onions and garlic and cook for for 1 minute

  4. 4

    Add chicken tossing to cover and cook until chicken is white all the way through.

  5. 5

    Pour coconut milk, tomatoe sauce, diced tomatoes, sugar into pan and stir

  6. 6

    Cover and simmer over medium low heat stirring occasionally for 30 to 40 minutes

  7. 7

    Serve over rice
