Ingredients

  1. 15/16 kgchicken breast, or drumsticks or thighs, cleaned and skin removed
  2. For the tandoori marinade:
  3. 2 cupsyogurt, plain
  4. 1 tablespoongaram masala
  5. 2 teaspoonscoriander powder
  6. 2 teaspoonschili powder
  7. 1 juice of 1 lemon
  8. 4 clovesgarlic, crushed
  9. 3 tablespoonsgrated ginger
  10. red food colouring
  11. For the garam massala mixture: (makes 0.5 cup)
  12. 2 tablespoonsground cardamom, seeds
  13. 1 cinnamon, stick, broken up
  14. 2 tablespoonscumin, seeds
  15. 1 teaspoonswhole cloves
  16. 2 tablespoonsblack peppercorns
  17. 1 teaspoonnutmeg, grated
  18. 2 tablespoonsdried coriander, seeds
  19. Special equipment: an electric coffee/ spice grinder

    Use a knife to make deep cuts on the surface of the chicken pieces. Place in a deep dish and set aside.

    To prepare the garam masala: mix, then toast all ingredients in a pan for 10 mn, transfer to a coffee/spice grinder and grind them into a powder.

  3. 3

    For the tandoori marinade, combine well all marinade ingredients in a small bowl. Mix until smooth adding salt according to taste.

  4. 4

    Pour the marinade over the chicken and make sure that all the chicken pieces are well coated. Refrigerate at least 2 hours (the longer the better).

  5. 5

    Transfer the chicken pieces an their marinade to a baking dish. Cook in the oven while turning them every once in a while and basting with the remaining marinade. Cook for around 20 mn or until both sides are done.

  6. 6

    Serve on a plate and squeeze some lemon juice over.

I’m Nour, my friends call me Noura. i live in Dubai and I have 2 beautiful children: Ahmad, 9 yrs old and Manal, 7 yrs old.We travel a lot and we love to try the food of the country when we are abroad. This isn’t easy with the kids since they always want to go to mcdonalds!!!However last summer we went to Lebanon for a vacation and since then my children love eating Lebanese food, they keep on asking for a manouche and kafta sandwich…I have no problem cooking all kinds of cuisine. I enjoy inviting my girlfriends for lunch and let them discover my cooking. My sister told me about this website, and I am very happy to be a member and learn more recipes.
