Fresh Spinach and Cherry Tomatoe Salad

Ingredients

  1. 1 kgfresh spinach leaves, preferably baby spinach leaves
  2. 1 1/2 cupscherry tomatoes
  3. 100 gparmesan cheese, shaved
  4. 1/4 cuproasted pine nuts
  5. - For the dressing
  6. 3 tablespoonsbalsamic vinegar
  7. 1 tablespoonhoney
  8. 2 teaspoonsmustard

    Clean the spinach leaves thoroughly and leave aside to dry.

    For the dressing: dissolve the honey in the balsamic vinegar, then add the mustard. Mix well and season with salt. Set the dressing aside.

    In a large salad bowl transfer the dried spinach leaves and then drop over them the cherry tomatoes.

    Arrange on top the shaved parmesan and finally sprinkle the roasted pine nuts.

    Before serving, pour dressing all over.

I love to cook even though i don't always have time to do it. I like inviting friends and cooking the complete menu from starters to dessert. This I try to do a few times a year.I am big on baking. I started baking at around 6... And I still enjoy it a lot. It is a major stress reliever and I love the smells that come out from the oven! Plus it is always kind of magical to witness a batter becoming a cake :) Favorite things to cook: banana muffins, fancy salads, brownies. All kind of pasta.
