  1. 3 eggs, separated into white and yolks
  2. 100 gsugar
  3. 400 gmascarpone
  4. 3 teaspoonsvanilla
  5. 30 lady fingers, or sponge fingers
  6. 1/2 literblack coffee
  7. 30 gcocoa powder, unsweetened

    Put the egg yolks, sugar, and vanilla in a bowl. Mix until the mixture is creamy and firm.

    Add in the mascarpone and continue mixing.

    Meanwhile, use a mixer to beat the egg whites into foam.

    Slowly, incorporate the beaten egg white into the mascarpone mixture until well combined.

    Prepare the black coffee and let cool.

    Soak the lady fingers in the cooled black coffee.

    In the bottom of a pyrex pan (or any other fridge proof pan), arrange a layer of the soaked lady fingers and spread over them a layer of mascarpone mixture. Then arrange another layer of lady finger and top with the rest of the mascarpone. Spread evenly.

    Sprinkle the cocoa powder all over and refrigerate for at least four hours.

    Serve cold.

Hello everyone here comes yasmina a proud Egyptian living currently in Turkey.I’m almost 29 yrs old and I am a consultant for an international firm.I grew up in Alexandria were I never cooked! . Moving to Cairo for university was tough for me since I had to take care of myself and cook for myself! It was a whole new experience, not always fun, lol.At the beginning my friends used to make jokes about my cooking but now I am pretty good at making salads and desserts, even they admit it…Now in Istanbul, I still cook and I have become interested by new cuisines. Travelling frequently is part of my work, and I love it because I taste new food from different countries and sometimes I get lucky and get their recipes. For instance recently I travelled to Morocco and I fell in love their gazelle horn and I learned how to do it… DELICIOUS…Stay tuned because I promise to add any new recipe I get from around the globe.
