Slow Cooker Herb-Roasted Chicken Thighs and Drumsticks with Potatoes

A simple recipe for cooking chicken in a slow cooker. It's a great alternative if you don't have other ingredients to make chicken in sauce. 😊
The amounts are approximate and can be adjusted to taste (I prefer to use fewer herbs). Cooking time may vary depending on the thickness of the chicken and the size of the potatoes.
Marinating is optional, but highly recommended. The more care you give the meat when cooking in this type of pot, the better the result.

Steps
- 1
The night before, instead of watching TV or playing games, head to the kitchen and gather your ingredients. Pour a splash of olive oil into a deep plate and add the herbs, chopped garlic, and season with salt and pepper. (You can also use a mortar and pestle to make a paste, then transfer it to the plate.) If you prefer not to marinate overnight, you can do this step right before cooking.
- 2
Coat each chicken thigh and drumstick in the mixture, then place them in a bag and refrigerate overnight. Pour any remaining marinade into the bag, seal it, and store in the fridge.
- 3
The next day, place the potatoes in the bottom of your slow cooker. Depending on their type, firmness, and size, you may want to cut them in half. Optional: Add a few orange wedges to the pot to mellow the sauce.
- 4
Place the marinated chicken on top of the potatoes, then pour in the rest of the marinade from the bag. Set the slow cooker to HIGH for 4 hours.
- 5
Optional: After cooking, if you want crispier chicken, transfer the pieces to a baking sheet and broil them in the oven for a few minutes. This is also a good time to check if the potatoes are done and stir the sauce.
- 6
Serve, snap a quick photo if you like, and enjoy!
