Ingredients

  • 1 cupwalnuts, 1 cup raisins
  • 1/2 cupcoconut flour
  • 1/2 cuppumpkin puree
  • 1/2 cupsemolina
  • 2eggs
  • 3 tbspsugar
  • 1 tspapple cider vinegar and pinch salt
  • 1/4 cupolive oil
  • 1 tsppumpkin spice (optional)
  • 1 tspvanilla essense
  • 1/2 tspbaking powder

Steps

    Preheat oven to 180 degrees Celsius, grease a baking tray and set aside. In a food processor, blend walnuts and raisins until broken down, in a large bowl, mix together walnut- raisin mix, coconut flour, semolina, baking powder, pumpkin spice and set aside.

    Next, blend together eggs, vanilla essence, apple cider, sugar, pumpkin puree and olive oil, add dry ingredients and combine until well incorporated, pour into baking tray and bake for 40 minutes, turn oven off and leave open for 5 minutes before taking the tray out of the oven. Serve warm with a dollop of cream or ice cream or a slice with a cup of tea.
