Remove skin from sausages and make into small balls. Finely chop the carrot, celery, onion and bell pepper - add all to a large pot with 1 teaspoon of olive oil.

Once the sausage balls begin to brown, add in the cooked lentils, tomato purée, stock and water.

Cook for around 15-20 minutes until the stock and water have been absorbed
