Steps

Take idli batter and add salt as per taste,and take steamer and let idli gets steam.Next make besan batter by adding all the spices and keep aside.And one side boil potatoes.

Mix nicely the batter there should be no lumps,next take a pan heat oil and add mustard seeds and let seeds slputters then add hing,curry leaves and saute for a minute.Next add ginger and garlic sand saute till raw smell goes.

Now add turmeric,coriander leaves and mix well and next add boiled potatoes and mix with spices well and last add more chopped coriander leaves and lemon juice give a good mix.

And keep in side let the stuffing cools down, take out the idlis from steamer and cool down idlis also.Next make potatoes in shape and size of idli round and flat like we make for pattice.

Next take idli place the potato pattice in between and cover again on top with idli and press gently so that idli gets stick to potato pattice nicely. Next dip into besan batter and coat nicely and deep fry like vada and our idli vada is ready serve with tamarind chutney and mint chutney and garnish with some sev and wafers.A enjoy this soft and delicious idli vada.
