Ingredients

30 mins
  1. 16 ozFresh Spinach
  2. 2 CupsBroth (Chicken, Beef, or Vegetable)
  3. 14 ozCan Artichokes, drained
  4. 3 TbspButter
  5. 1Large Onion
  6. 3 TbspFlour
  7. 2 1/2 CupsMilk
  8. 2 TbspLemon Juice
  9. 1 CupGrated Parmesean
  10. to tasteSalt and pepper

Steps

  1. 1

    Individually. Roughly chop Fresh Spinach, Onion, and Artichokes in Food Processor, or by hand.

    In a large pot melt butter. Saute onions in melted butter until they are soft. Careful not to scorch them.

  3. 3

    Add flour and stir until smooth. Heat thoroughly to allow the flour to absorb the flavor.

  4. 4

    Gradually whisk in the milk. Heat until thickened.

  5. 5

    Stir in Artichokes, Spinach, Lemon Juice, Parmesan Cheese, Broth, and season to taste.

  6. 6

    Bring to a slow simmer for about 10 minutes. Do NOT boil.
