Ingredients

  1. 4 1/2 lbsrice noodle sheets (about 2 kg)
  2. 4 piecesfirm tofu
  3. 1 lb (2 oz)sausage (about 500 g)
  4. 2 1/4 lbscucumbers (about 1 kg)
  5. 1pineapple
  6. 7 ozVietnamese pork roll (giò lụa) (about 200 g)
  7. 5eggs
  8. 10 1/2 ozpork (about 300 g)
  9. 2mangoes
  10. Lettuce, fresh herbs (such as cilantro, mint, basil)
  11. Garlic, chili, lime, fish sauce, sugar, salt

  1. 1

    Wash the cucumbers in lightly salted water, then cut into thin strips. Quarter the pineapple and slice thinly lengthwise. Cut the mangoes into thin strips or slices.

    Crack the eggs into a bowl, beat with fish sauce and salt, then cook into thin omelets. Slice into strips about 1/4 inch (0.5 cm) wide. Cut the sausage into quarters and pan-fry until golden.

    Pick and wash the fresh herbs and lettuce in lightly salted water.

    Cut the tofu into strips and pan-fry until golden. Boil the pork, then cut into strips.

    Make the sweet and sour dipping sauce: Mix 2 tablespoons fish sauce, 2 tablespoons sugar, 1 teaspoon salt, 1 chopped red chili, a little lime juice, minced garlic, and 3 tablespoons water.

    Arrange the tofu, Vietnamese pork roll, mango, pineapple, cucumber, egg strips, sausage, boiled pork, and fresh herbs on a plate. Separate the rice noodle sheets, add the fillings, and roll them up. Dip in the prepared sauce and enjoy.
