Take a big bowl and mix finely chopped onions, tomatoes, carrots, coriander leaves, capsicum, oats, milk, turmeric powder, pepper powder and salt.

Then add the eggs to this mixture and mix well.

Heat oil in a frying pan and pour the mixture on pan. spread it evenly.

Once the omelette is cooked on one side, turn the other side. Cook it further for two minutes. Switch off the gas once done and serve hot.
