Ingredients

  1. 200 gmpaneer
  2. 2 cupscooked basmati rice
  3. 7-10dry red chillies
  4. 2 tbspvinegar
  5. 4big garlic cloves
  6. 1 inchginger chopped
  7. 1 tspChopped green chilli
  8. 1big onion – sliced
  9. 1 cupveggies like carrot,capcicum, cabbage(cut length wise)
  10. 1 tbspsweet corn
  11. 1 tbspSpring onion chopped
  12. 4 tbspsoy sauce
  13. 1 tspblack pepper powder
  14. 2 tbspoil
  15. to tasteSalt

Cooking Instructions

    Soak dry red chillies in vinegar for half an hour.Then grind the red chillies soaked in vinegar with garlic cloves and ginger to a smooth paste.

    If using frozen paneer, allow it to remain in hot boiling water for 10 minutes. It will make it soft in texture.Heat oil in a pan and shallow fry the paneer slices and keep it in a bowl of lukewarm water to retain it's softness after frying.

    Heat 2 tbsp oil in another pan, add onions to it and fry till it turns pinkish in colour. Then add sliced green chilli.
    Then, add the cup of mixed veggies, sweet corn and let it cook for 5 to 10 minutes. Veggies should be crunchy and not mushy.

    Add the set aside red chilli mixture and soy sauce to this. Give it a stir. Add salt to taste (bear in mind that soy sauce does contains salt, so adjust it according to taste). And keep it on flame till the raw smell fades away.

    Add cooked rice and mix it evenly for the mixture to get coated evenly

    Add the fried paneer slices to this.Add spring onions and black pepper powder to this.Switch off the hob.
