Prepare all the ingredients.

Peel and cut the potatoes into chunks, then soak them in water. Peel and cut the carrots into chunks and set aside.

Rub the shirataki noodles with a little salt, rinse well, then boil in water for 5 minutes. Drain and cut into shorter lengths as needed. Set aside.

Cut the onion into large dice, slice the ginger into thin strips, and cut the green onions into sections.

Prepare the seasonings.

Heat a pan and add 1 tablespoon vegetable oil. Add the sliced pork and use chopsticks to separate the pieces as you stir-fry.

Add the ginger and green onion to the pork and stir-fry together. Pour in 2 tablespoons sake and continue to stir-fry. When the pork is halfway cooked and turns white, add the onion.

Add the shirataki noodles to the pan and stir-fry with the pork.

Add the broth ingredients to the pan and mix well with the other ingredients.

Add the potato and carrot chunks. Bring to a boil, then reduce to low heat, cover with a lid, and simmer.

After 10 minutes, open the lid and gently stir the ingredients. Cover again and simmer for another 10 minutes.

Turn off the heat and let it sit, covered, for 10 minutes to allow the flavors to soak in.

After preparing the ingredients, stir-fry first, then add the broth and simmer until the flavors are absorbed. This method makes the dish even tastier.
