Aalu Vaniya vadi

Heat 2 tbsp oil in a pan. Add 1 cup vaniya and roast well. Remove from flame and let them cool.

In a mixer blend 1 inch ginger, 1 cup chopped onions and 2 tbsp water.

Heat 2 tbsp oil in a pan. Add 1 tsp cumin seeds and let them crackle. Then add blended onion-ginger paste, 1 cup water and saute. Let the paste cook.

Add 1 tsp turmeric powder and let the paste thicken. Add the roasted vaniya and 1 cup chopped potatoes. Saute.

Add around 2 cups of water, cover and let the potatoes cook.

After around 10-15 minutes when the potatoes cook, add 1 cup tomato puree, 1 tsp sugar, 1 tsp garam masala, 1 tbsp red chilli powder and salt as per taste.

Cover and let the tomato puree cook. Add 2-3 tbsp chopped coriander leaves. Mix and serve hot.
