Ingredients

  • 1/4 cup (50 g)sugar
  • 3/8 cup (50 g)all-purpose flour
  • 5egg whites
  • 2egg yolks

Steps

  1. 1

    Add the egg yolks to the egg whites and combine with the melted chocolate and butter.

  2. 2

    Delicately fold in the sifted flour.
    Butter and flour 6 cups of a muffin pan. Pour batter three-quarters of the way up each cup.

  3. 3

    Cover and refrigerate until well chilled, or freeze.

  4. 4

    When ready to serve, bake in the oven at 400°F (200°C) for 5 to 6 minutes (8 to 10 minutes, if the cupcakes were frozen).

  5. 5

    Serve immediately, so that the centers (or hearts) of the cupcakes are still soft.
