Avocado & Mushrooms on Toast

I was gutted to learn a few weeks ago that I have high cholesterol. With a pretty healthy diet, I had smugly thought I would have low heart disease risk, but apparently not 😭 I am making a huge effort to lower my cholesterol by eating omega 3 fatty acids (including adding some oily fish back into my diet), and also eating good fats like avocados with fibre and whole grains. This is my cholesterol lowering (🤞🏻) breakie ❤️

Ingredients

  1. 2 sliceswhole grain bread
  2. 2 tbspcrushed avocado
  3. 2large field mushrooms
  4. 1/2 tsponion granules
  5. 1/2 tspsmoked paprika
  6. Olive oil

Steps

  1. 1

    Slice the mushrooms and pan fry with olive oil and a splash of water to get the mushrooms sizzling. Sprinkle over the seasonings and continue to cook for a few mins until done.

    Toast the bread.

    Top the toast with the mushrooms, then top with avocado and season with salt and pepper.
