Put the broth in a pot with a splash of oil, all while cold. Add the onion and a little salt. Cook for 30 minutes. Peel and chop the potato.

Add the potato and thyme. Season with salt and pepper to taste and cook for another 20 minutes. Serve very hot with cheese. To freeze, let cool and store in labeled freezer bags.
