Pearled barley consists of hulled barley grains. This cereal is rich in folic acid, phosphorus, and potassium, and also provides a good amount of iron, zinc, and sulfur among other minerals. It is often consumed in soups or stews. However, it is also delicious in pancakes or cakes. It does require a relatively long cooking time. I believe it's worth using, and you can also cook it in large quantities and freeze it, as it handles this process perfectly.

Ingredients

  • 10 1/2 ozpearled barley (about 300 grams)
  • 3 tablespoonsdried mushrooms
  • 8 1/2 cupscold vegetable broth (2 liters)
  • 1grated onion
  • 1medium potato
  • Salt, ground pepper, and dried thyme
  • as neededGrated cheese,
  • Extra virgin olive oil

    Put the broth in a pot with a splash of oil, all while cold. Add the onion and a little salt. Cook for 30 minutes. Peel and chop the potato.

    Add the potato and thyme. Season with salt and pepper to taste and cook for another 20 minutes. Serve very hot with cheese. To freeze, let cool and store in labeled freezer bags.
