Oven grilled parsnips

About a year ago I tried to find a healthier snack to go with a movie or a soccer game with friends, and these parsnips were a perfect! I love them and you can add a carrot or two because it is a great mix.
Very easy to make and paired with some nice dip they can become your snack superstar too.

About a year ago I tried to find a healthier snack to go with a movie or a soccer game with friends, and these parsnips were a perfect! I love them and you can add a carrot or two because it is a great mix.

Peel the parsnips and chop them into finger long pieces around 0.5 cm or quarter inch thick.

Put them inside a bowl and squeeze the lemon juice over them. Add some olive oil (about the same amount as lemon juice). Season generously with ground pepper, salt and cayenne. And leave to rest for about 10 minutes. Mix it a few times and preheat the oven to 250°C (480°F).

Spread it evenly over baking paper. Let it grill inside the oven for around 20 min then mix and flip them a bit and leave for another 20 minutes until the edges get dark and crusty.

When they are done you can sprinkle them with a bit more salt (taste them first) and serve with your favorite dip.
