Steps

Heat oil in saucepan, fry diced onion until translucent. Meanwhile cook the Chickpeas.

Add garlic and ginger to saucepan and mix. Add drained Chickpeas, spinach and tomatoes to saucepan.

Add pinch of salt and pepper, then add curry powder. Bring to the boil. Simmer for 15mins, stirring occasionally.

Serve with pilau rice and enjoy!
