Ingredients

  • For fillings
  • 1/2 cupsoya chunks
  • 1/2 cupcorn
  • 1 cupchopped carrot and capcicum
  • 1/2 cupbroccoli
  • 1tomato
  • 1green chilli
  • as neededSome chopped coriander leaves for
  • 2 tbspoil
  • 1 tspcumin seeds
  • 4-5curry leaves
  • 1 tspgaram masala
  • 1 tspred chilli powder
  • 1 tspcoriander powder
  • 2 tsp or as per tastesalt adjust
  • 1 tspturmeric powder
  • 1 tbspginger garlic paste
  • 1medium size onion
  • 1lemon juice
  • For samosa dough 8 samosas
  • 2 cupsall purpose flour
  • 1 tspsalt
  • 4 tbspghee
  • 1 tspcarom seeds
  • as requiredWater for kneading

    First step boil corn and broccoli keep aside.Start kneading dough take a bowl add all purpose flour with ghee,salt,and carom seeds and with your finger tub ghee to flour to get breadcrumb like consistency need more ghee you can add and use less water while kneading dough make it firm dough.

    Next cover the dough with wet cotton cloth.next step boil soya chunks in hot water for 1 minute and remove it squeezed out the while water from the chunks,and our corn and broccoli has been boiled nicely take out and drain the water and smashed it coarsely and keep aside.

    Next grind finely soya chunks as I said remove excess water by squeezing chunks then you take for grinding now it's finely grind.Chopped all veggies and tomato and keep ready for making filling.

    Take a pan heat oil and add cumin seeds and let it splutter and then add some curry leaves,onion,green chilli.When onion has become soft add ginger garlic paste and saute for a minute to get raw smell goes and then add tomatoes and saute till it becomes soft.

    Next add chopped veggies and saute till carrot and capsicum becomes soft then later add smashed corn and broccoli, and grinded soya chunks with adding all the spices and lemon juice.

    Mix all the ingredients well and add chopped coriander leaves and mix it again and cover it and keep for 5 minutes.Next our dough is ready, make small balls and keep.

    Roll it like chapati size and cut from centre and make 2 pcs for samosa cover fold it like a cone and fill the filling inside properly and close from top by pressing it with finger use water to get it stick and keep all samosas ready.

    Heat enough oil in a kadai deep fry samosas don't add all together take only 2 at a time and fry till it comes golden brown and when it is done dont remove on tissue paper always keep fried things first on oven grill it will stay crispy for long time and then u can keep on tissue paper and serve this yummy delicious samosas with different taste and enjoy with cutting chai..
