Ingredients

  • 1 cupquinoa
  • 2 cupschicken stock
  • 2 cupskale
  • 1 cupred onions diced
  • 1 cuppitted cherries sliced lengthwise
  • 1 canPalm hearts cut into small peices
  • 3 tbspolive oil
  • 3 tbspfresh lemon juice
  • to tastesalt and pepper
  • I can of chicken peas drained

Steps

  1. 1

    Bring chicken stock to a boil. Add quinoa, cover pot with a lid and simmer for 25 minutes. Set aside to cool.

  2. 2

    Add all ingredients in a bowl with cooled quinoa. Mix and enjoy.
