Beef Tenderloin with Cherry Tomatoes and Reduction Sauce

First, season the tenderloin with salt, pepper, a little olive oil, and thyme. Then, place it in a very hot pot and cover it (there will be a lot of smoke, but that's the point). Cook for a couple of minutes, then flip the tenderloin, repeating until the entire tenderloin reaches medium doneness.

Add olive oil, oregano, and thyme to the tomatoes, and place them in the oven at 300°F for about 20 minutes.

For the sauce, add the wine, vinegar, and sugar. When it thickens, remove it from the heat. Be careful not to overcook, or it will turn into caramel.
