Raw jack fruit comes with a whole host of benefits - it is diabetic friendly fruit which also aids in weight loss and helps reduce cholesterol in our body. So I didn't add up potatoes as planned initially and can be seen in ingredients pic... Raw Jackfruit is high in vitamin C and high in fiber content and also in calcium that is really essential in bone health. Bon Appetite !!!

Ingredients

5 servings
  1. 400 gmsKathal (Raw jackfruit)
  2. 3Medium Onion (Thin sliced)
  3. 2 (½ Cup Puree form)Large Tomatoes
  4. 1/2 TeaspoonAsafoetida (Hing)
  5. 1Bay Leaf (Tej patta)
  6. 4 ClovesGarlic
  7. 1 " Ginger
  8. 1/4 CupFresh curd
  9. 1 " Cinnamon stick (Dalchini)
  10. 2Black Cardamom. (Badi Elaichi)
  11. 2 TeaspoonCoriander Powder
  12. 1/2 TeaspoonTurmeric Powder
  13. 1/2 TeaspoonGaram Masala Powder
  14. 1/2 TeaspoonCumin Powder
  15. 1/2 TeaspoonRed Chilli Powder
  16. 2 TablespoonsMustard Oil
  17. as per tasteSalt
  18. 2 TablespoonsFresh green coriander leaves to garnish

Steps

  1. 1

    As always table all ingredients together for easier and hassle free cooking.

    In order to cut jackfruit effortlessly and making it less sticky and avoid latex or sap fall; palm your hands and knife with mustard oil, cut into two halves and the one half cut into 4 pieces below any old newspaper to let milky sac fall on the same.

    Peel out jackfruit scales and cut inner portions and place them in salt water to avoid them getting darker, fry in Kadai to make them crispier and transfer in separate plate.

    Now in Kadai heat a oil and add asafoetida, add onions and fry to they get brown colour also add bay leaf, Cinnamon stick along with garlic cloves and ginger.

    In a separate bowl mix curd with fresh tomato puree and add all turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder. Now pour some water to it, stir to combine it well.

    Once the onion has turned brown, add the prepared curd masala in the kadai, Add the  kathal (raw jackfruit) to the masala, add salt as per taste and stir well to combine.Add extra cup of water, cover the kadai with lid to allow cooking of the yummy Kathal Masala Sabzi for 5 minutes and turn off the heat. Allow the sabzi to cook naturally.

    Once it is properly cooked, garnish it with fresh coriander leaves and serve hot with Parathas or chapatis and even Jeera rice.
