Papas Arrugadas

A traditional Canarian dish made by boiling potatoes. It's served with Mojo Rojo (I have previously shared the recipe). I normally find it in the starters section of the menu in the restaurants. It tastes nice with mojo verde, but I haven't got around to make it. In the picture, alongside the homemade mojo rojo, I have mojo verde which was a ready made shop bought one.

Clean and wash the potatoes.

In a large pot add the potatoes, salt and water. Cover the pot and cook for 20 minutes or untill the potatoes are cooked.

Take the pot off from the heat and pour the water off from the pot. Return the pot on the stove and let the steam evaporate. You'll see a layer of salt on the skin and they crinkle, but I can't get them to crinkle that much.

Serve hot with mojo rojo.
